Date and Raisin Oatmeal Cookies

These cookies are so amazingly simple to make, absolutely delicious and the great thing is that they contain no sugar, butter or salt. Completely vegan and if you source your oats correctly, gluten free too. You don't have to mess about with flours or measuring baking soda, all you need are a few ripe bananas. A fuss free snack, perfect for little fingers...and adults, guys they are yummy!

Date and Raisin Oatmeal Cookies | The Mother Cooker

Makes: 12 cookiesPrep time: 5 minsBake time: 10 minsRequires: Grease proof paper

Ingredients

  • 100g of rolled oats
  • 50g soft dates
  • 50g of raisins
  • Juice from 1 clementine
  • 1 tblsp of honey
  • 1/2 tsp of cinnamon
  • 3 ripe fun size bananas

Directions

  1. Blitz dates in a food processor until a semi smooth paste.
  2. Mash bananas.
  3. Add all ingredients in to a large bowl and mix thoroughly.
  4. Using a tablespoon, take 1 spoons worth of mixture at a time, roll in to a ball and flatten with a fork on to a piece of grease proof paper. Repeat the process until you have used up all of the mixture.
  5. Bake in the oven at 180fan/200c/350f for 10 minutes, remove and allow to cool on a wire rack. Store in an airtight container, consume within 48 hours.
