Super Simple Strawberry Smoothie Ice Lollies | The Mother Cooker

What a mouthful eh? Try and say it quickly "Super Simple Strawberry Smoothie Ice Lollies!" These simple ice lollies are so easy to make, that I feel like a cheat calling it a 'recipe'. But seeing as they are one of my daughter's favourite things in the world, I had to share them with you. It's super hot at the moment and with it now being the official start of summer, frozen fun is a must. You can replace the milk with any nut milk you wish, to make them dairy free and you can switch the honey to maple syrup, making them completely vegan. The key ingredient here is beautifully ripe strawberries. You want them to be a lovely deep red colour, and at room temeperature when you add them in. This means that they will be at their sweetest and as this recipe omits refined sugar, with only a small squeeze of honey, those strawberries need to sing.

Serves: 10-12 mini ice lollies or 6 largePrep time: 5 minutesFreeze time: 4 hours for mini or 6 for large

Ingredients
  • 1 banana
  • 180g strawberries, green removed
  • 150ml whole milk
  • Squeeze of honey
Directions
  1. Place everything in a blender and blitz until smooth.
  2. Give the blender a few heavy taps to remove as many air bubbles as possible.
  3. Pour into moulds, add a stick and freeze.
